Activités de recherche

L’équipe Fonction et Régulation des protéines de l’œuf (FRPO) de l’INRA-URA83 travaille depuis 1990 sur la caractérisation des protéines de l’œuf et  explore la variabilité des défenses chimiques de l’œuf associée à l’environnement du stockage des œufs, à la physiologie de la poule ou à son origine génétique. L’équipe possède l’expertise en biochimie des protéines, en biologie moléculaire, travaux qui ont aboutit à la mise en évidence d’un grand nombre de nouvelles protéines dans l’œuf de poules (plusieurs centaines) grâce au séquençage du génome de la poule et à l’enrichissement des bases de données. L’équipe est spécialisée dans la caractérisation des protéines antimicrobiennes Dans le cadre du programme européen RESCAPE que nous avons coordonné, nous avons démontré une activation de l’activité antisalmonellique du blanc d’œuf au cours de son stockage. L’équipe coordonne un nouveau programme ANR blanc, OVOMINING (2009-2012) sur la caractérisation de quelques constituants de l’œuf et développera dans ce programme des technologies (purification, analyse microbiologique à grand débit, caractérisation biochimique de fractions) qui seront valorisées à une échelle semi industrielle (programme Oval inter-régional).
